Easy As Pumpkin Soup
This soup is super easy and quick. It’s a great meat free option for lunch or dinner, especially on a cool winters day.

INGREDIENTS
1 tbsp olive oil
3 cloves garlic
1 onion diced
1 tsp nutmeg
1 400ml can of coconut cream
400ml water
1 pumpkin peeled and cut
salt and pepper
1 baguette
METHOD
Heat oil a large pot and fry garlic and onions until soft. Add nutmeg and stir. Pour coconut cream and water and stir.
Add the pumpkin to the pot. Bring to the boil and simmer until pumpkin is soft. Remove from stove and gently mash until it looks like a lumpy soup. Add salt and pepper and mix.
When cool pour into a blender or use a stick blender and blitz until smooth.
Serve some immediately and/or pour into containers of you desired portion sizes to freeze. To serve the frozen portion, remove and allow to defrost. Either pour into a pot on a low heat and gently heat through or heat in a microwave.
Season to taste and serve with a warm baguette.

Slow Cooker - Alternatively, place all ingredients into a slow cooker and cook on low for 8 hours. Allow to cool slightly and use a stick blender to blitz until smooth.
