Easy Pumpkin Soup

This soup is so easy and quick and is a great meat free option for lunch or dinner, especially on a cool winters day.


  • 1 Tbspn olive oil

  • 3 cloves garlic

  • 1 onion diced

  • 1 tspn nutmeg

  • 2 400ml cans coconut cream

  • 400ml water

  • 1 pumpkin peeled and cut

  • 1 large kumara peeled and cut

  • salt and pepper

  • 1 baguette


Heat oil a large pot and fry garlic and onions until soft. Add nutmeg and stir. poor coconut cream and water and stir.

Add the pumpkin and kumara to the pot. Bring to the boil and simmer until pumpkin is soft. Remove from stove and gently mash until it looks like a lumpy soup. Add salt and pepper and mix. When cool poor into blender and blitz until smooth.

Serve some immediately and/or poor into containers of you desired portion sizes to freeze. To serve frozen portion, remove and allow to defrost. Either poor into a pot on a low heat and gently heat through or heat in a microwave. Season to taste and serve with warm baguette.
