Fish Tortilla’s
A fresh and easy midweek dinner

INGREDIENTS
2 large fish fillets
2 eggs
1/2 cup of oil for frying
1 cup flour
salt and pepper
10 tortillas
1 avocado, diced
3 large tomatoes. diced
1/2 cucumber, diced
1/2 red onion, diced
1/2 iceberg lettuce
Sour cream and feta to serve
INGREDIENTS
Slice fish into bite-size slices.
In a large bowl mix flour and salt and pepper. In a separate bowl whisk the eggs place next to the flour bowl and sliced fish. Add oil to a pan over high heat.
While oil is heating up and 1/2 of the fish pieces to the egg mixture. Place each piece of fish from the egg mixture to the flour mixture using tongs. Shake the bowl to coat fish with flour.
When oil begins to bubble add fish to hot oil to fry. Cook until batter is golden brown. When cooked place on a plate with a paper towel to soak up excess oil. Repeat process for the second batch.
Heat tortillas. Combine avocado, tomatoes, cucumber and red onion in a bowl.
To serve, spread sour cream over tortilla and top with lettuce, fish and salad mix. Top with crumbled feta to serve.
