Pumpkin Feta & Caramelised Onion Tart

30mins Serves 8

INGREDIENTS

1/2 a crown pumpkin

1 tbsp olive oil

1 brown onion, cut into slices

1 tbsp brown sugar

1 tsp salt

1 tbsp balsamic vinegar

175gms puff pastry

50gms feta

mesclun salad

salad dressing

METHOD

Preheat oven to 180°C

Slice skin off the pumpkin and slice pumpkin into pieces around 1 cm thick. Lay on a baking tray, cover with tin foil and bake for 20 minutes until the pumpkin is just starting to soften.

While pumpkin is cooking caramelise onions. Add oil, onions, sugar, salt, and vinegar to a frypan over medium heat. Combine well and leave to soften and caramelise while mixing often throughout.

Roll the pastry out and fit into a 30 cm round tart dish. Using a fork gently poke holes in the bottom of the pastry.

When the pumpkin is cooked uncover and using a fork roughly mash the pumpkin to form a lumpy and fluffy mash. Add to the tart dish. Cut feta into small pieces and add to pumpkin in the tart dish. Top with caramelised onions and bake for 15 minutes.

Serve alongside mesclun salad and dressing.
