INGREDIENTS

leftover pastry

ham

cheese

relish or sauce - optional

1 small egg whisked

METHOD

Preheat oven to 180°C.

Roll out the pastry into a large square shape. Cut into squares approx 10cm by 10cm. If you are using relish spread over the pastry leaving a 1cm edge all the way around the pastry. Add ham and then cheese over the area.

Brush the edges with egg and then fold the pastry in half and press edges together using a fork. Place fork holes on the top of the pastie and brush the pastie with egg was all over. Repeat to use up your pastry.

Bake in the oven for 10 minutes.

Add to lunchboxes and store in an airtight container in the fridge for 2-3 days.

These can also be frozen before brushing with eggwash and cooking. Remove from freezer brush with egg wash and bake on an oven tray for 10-15 minutes.
