Ingredients
MEATBALLS
1/2 cup breadcrumbs
1/4 cup milk
500gms chicken mince
salt & pepper
1 egg
1/2 cup grated parmesan
2 tsp fresh or dried herbs of choice
250gms dried or fresh pasta
2 tbsp salt
SAUCE
2 tbsp olive oil
1 leek
10 button mushrooms, sliced
2 cloves of garlic
4 tbsp cream
4 tbsp pesto
1 cup grated parmesan
1 cup pasta water (water that the pasta is cooking in)
salt & pepper
METHOD
In a small bowl combine breadcrumbs and milk and set aside.
In a medium bowl add mince, salt, pepper, egg, parmesan, herbs and breadcrumb mix. Combine well and roll into balls approximately two tablespoons in size.
Cook pasta according to packet instructions. Add salt to pasta water.
In a pan over medium heat drizzle oil and brown meatballs. Remove and set aside. In the same pan add some more oil with leeks, mushrooms and garlic. Cook until vegetables have softened.
Add cream, pesto, parmesan and pasta water and mix together to form the sauce. Add meatballs back to the pan and simmer gently over low heat until meatballs have cooked through and the sauce has thickened.
Season with salt and pepper and serve with pasta.
