Honey Soy Pork Noodle Stir Fry

A great way to add some colourful veges to your weekday meals.

Serves 5

Ingredients

500gms pork stri-fry

2 tbsp brown sugar

2 tbsp soy sauce

1 tbsp honey

200gms thin rice noodles

1/2 red onion

1/2 red capsicum

1 large carrot, peeled

1 tbsp of salt

1/4 cup noodle water

1/4 cup oyster sauce

100gms pak choy

METHOD

Combine pork, sugar, soy sauce and honey in a bowl and set aside. Add noodles and salt to a medium sized bowl and cover with boiled jug water.

Thinly slice onion, capsicum and carrot. Heat a tablespoon of oil in a wok or large frypan over a high heat. Add pork in two batches and stirfry until golden brown. Set aside cooked pork.

In the same frypan add a drizzle of oil and onion, capsicum, and carrot. Strifry until they begin to soften. Return pork and add noodle water, oyster sauce and pak choy.

Drain and rinse noodles. Serve stirfry on a bed of noodles.
