Banana Bread
Banana Bread
A large recipe that make two loaves to have ready to go in the freezer.
Prep 5 - 10 minutes Cook 25 - 30 minutes
Serves 2 large loaves
Ingredients
4 cups of flour
2 tsp of baking soda
3/4 cup oil (canola, olive or melted coconut oil)
3/4 cup of brown sugar
3 eggs
3/4 cup plain yoghurt
1/2 cup milk
4 large ripe bananas, mashed
1 1/2 cup chopped walnuts (optional)
METHOD
Pre-heat oven to 180°C
line two loaf tins with baking paper.
In a large bowl sift flour and baking soda.
In another bowl add oil, sugar, and eggs. Whisk together to combine. add to dry ingredients with yoghurt milk and bananas. Fold together gently to combine. Fold in chopped walnuts.
Divide mixture between two loaf tins or bake one and then the other.
Bake for 25-30 minutes.
Store in an air tight container in the fridge for 4 - 5 days. Allow to cool and freeze for up to 3 months.
*Slice bread before freezing to have ready to go pieces.
