Six Ingredient Chicken Pasta

This is a go to meal that you can whip up when you a short on time! Make it once and you will know it off by heart. The base of this meal has SIX INGREDIENTS but you can add EXTRA veg if you have it on hand.

Serves 5

INGREDIENTS

250gms spaghetti pasta

500gms boneless chicken, diced

300mls of cream

1/2 cup pasta water

2 cups of frozen peas

1/2 cup grated Parmesan

1 lemon (zest and juice)

salt and pepper to season

METHOD

Cook pasta according to packet instructions.

Over a medium heat add a little oil to pan and brown chicken. Add cream, pasta water, peas, Parmesan and the zest from the lemon. Season with salt and pepper and combine well. Simmer gently until chicken has cooked through and sauce has thickened.

Drain pasta and add chicken mixture to pasta. Mix well and squeeze juice from lemon into pasta.

Season and top with extra Parmesan to serve.

RECIPE NOTES

  • Use half and half milk and cream for a lighter sauce

  • Other vegetables like spinach, corn or beans can be used as well as or to substitute peas

  • Great left over lunch
